Bluefin Tuna in Middletown, NY

Deep red, rich and buttery, bluefin is the most prized tuna in sushi. Taste it in our signature rolls, at the sushi bar, seared from the kitchen and on the hibachi grill.

What makes bluefin special

Bluefin is the largest of the tunas and the one sushi chefs prize most. Its meat is a deep, glossy red, laced with fine lines of fat that give it a richer, rounder flavor and a softer, more buttery texture than leaner tunas like yellowfin or albacore.

Akami, chutoro and otoro

A bluefin is cut into three grades by how much fat runs through the meat. Akami is the lean, ruby-red meat from the back: clean, firm and full of tuna flavor. Chutoro, the medium-fatty cut from the belly's edge, is pinker and silkier. Otoro, the fattiest part of the belly, is pale pink, heavily marbled and melts on the tongue. Toro is the name for the fatty belly cuts.

Bluefin is high in protein and a rich source of omega-3 fats (EPA and DHA), vitamin B12, vitamin D and selenium. The fattier the cut, the more omega-3s it carries.

How to spot quality bluefin

Fresh bluefin is a bright, deep red that looks almost translucent, with clean white lines of fat. It smells mild and clean, like the ocean, never fishy. The texture is firm and smooth, and the flavor finishes sweet. Our sushi bar cuts fish daily.

Questions, Answered

Where can I get bluefin tuna in Middletown, NY?

At Mr Sushi & Grill, 400 Route 211 East in Wallkill Plaza (Exit 120 off Route 17). Bluefin is in eight of our signature rolls, at the sushi bar as toro, seared as the Bluefin Tuna Steak and on the hibachi grill.

What is the difference between bluefin and other tuna?

Bluefin is the largest tuna and has more fat running through its meat than yellowfin or albacore, so it tastes richer and feels more buttery. Its deep red color and marbling are why sushi chefs prize it.

What is toro?

Toro is the fatty belly of the tuna. Chutoro is medium-fatty and otoro is the fattiest, most marbled cut, which melts in your mouth. Ask for Tuna Belly (Toro) at our sushi bar.

Is bluefin tuna healthy?

Bluefin is high in protein and rich in omega-3 fats, vitamin B12, vitamin D and selenium. Like other large tuna, it can be higher in mercury, so pregnant women and young children should check with their doctor about how much is right for them.
